ACC Culinary Comp Results

The ACC Culinary Competition was held today at Holmesglen Waverley, with 19 students from five of our schools involved. This year produced some outstanding results, with the judging panel from Holmesglen commenting on the skill and creativity of the students, as well as their professional approach to their work. Well done to all involved and particularly the staff that helped prepare the students for this event.

Details of the competition entries from each school:

1st Place – St Bernard’s College
Miso Butter Balls – fried chicken tenderloins filled with miso butter on top of wasabi mayo topped with red onion pickle; Chicken thighs marinated in soy sauce and aromatics topped with cabbage and radish salad; Chicken Gyoza with a say, garlic and ginger sauce.


2nd Place – Parade College
Sous vide chicken breast on a pea puree with chicken quenelles, chicken crumb and a mushroom jus.


3rd Place – St Joseph’s College Ferntree Gully
Chilli and ginger chicken dumplings in chicken broth


4th Place – CBC St Kilda
Lemon and rosemary roast chicken with potato fondant, corn puree and chicken jus, beetroot and passionfruit salad.


5th Place – Simonds Catholic College
Chicken gyoza, daikon and carrot salad and curried chicken.


We are indebted to Holmesglen for their ongoing support in hosting this annual event. They generously allow our students to utilise their professional learning areas in the Hospitality section of the campus, as well as providing expert guidance and oversight through their friendly hospitality staff.
